The graham cracker was originally conceived of as a health food as part of the Graham Diet, a regimen to suppress what Reverend Graham considered unhealthy carnal urges, the source of many maladies according to Graham. Reverend Graham would often lecture on "self-abuse", as masturbation was commonly called at the time. Graham would often say how these experiences were inspired by children eating crackers. One of his many theories was that one could curb one's sexual appetite by eating bland foods. Another man who held this belief was John Harvey Kellogg, the inventor of the corn flakes cereal.

Ingredients for homemade graham crackers: whole wheat flour, all-purpose flour, salt, sugar, baking soda, baking powder, milk, honey, vanilla, and butter.

Mixing the flour, sugar, baking powder, baking soda, salt, and cinnamon in the bowl of a food processor.

Combine the flour, sugar, baking powder, baking soda, salt, and cinnamon in the bowl of a food processor. Pulse to thoroughly mix the ingredients. Add the butter and pulse until it is the texture of wet sand and the butter is in pea size chunks.

In a separate bowl combine the honey, milk, and vanilla and whisk until blended. With the food processor running stream the liquid mixture into the dry mixture. It should come together into a dry ball.

Remove the disc and place on top a sheet of parchment paper. Top with a second piece of parchment. Roll the dough out until it is between 1/8 and 1/4 inch thick.

Homemade Graham Crackers

  • Oven 325º / 165º C

Ingredients

  • 234 grams / 8-1/4 ounces whole wheat flour (graham flour)
  • 56 grams / 2 ounces all purpose flour
  • 85 grams / 3 ounces sugar
  • 3 grams / 3/4 teaspoon baking powder
  • 3 grams / 1/2 teaspoon baking soda
  • Pinch salt
  • 2 grams / 1/2 teaspoon cinnamon
  • 85 grams / 3 ounces butter, cut into small pieces
  • 60 grams / 2-1/4 ounces honey
  • 45 grams / 1-1/2 ounces milk
  • 3 grams / 1/2 teaspoon vanilla

Method

  1. Combine the flour, sugar, baking powder, baking soda, salt, and cinnamon in the bowl of a food processor. Pulse to thoroughly mix the ingredients.
  2. Add the butter and pulse until it is the texture of wet sand and the butter is in pea size chunks.
  3. In a separate bowl combine the honey, milk, and vanilla and whisk until blended. 
  4. With the food processor running stream the liquid mixture into the dry mixture. It should come together into a dry ball.
  5. Lay out a sheet of plastic film.
  6. Transfer the dough to the film and form into a disc.
  7. Wrap with plastic and refrigerate for 30 minutes.
  8. Preheat oven to 325º F / 165º C.
  9. Remove the disc and place on top a sheet of parchment paper. Top with a second piece of parchment.
  10. Roll the dough out until it is between 1/8 and 1/4 inch thick.
  11. Transfer the dough to a sheet pan by picking up the parchment and settings it on top of the sheet pan.
  12. Remove the top piece of parchment and cut the dough into equal size pieces. 
  13. Then go around the outside of the dough and trim the ends to a consistent edge.
  14. Next pierce the dough with a fork about every inch or so.
  15. Bake in a preheated oven until golden brown, about 30 minutes.
  16. Remove to a wire rack and cool to room temperature.
  17. Snap the crackers into uniform pieces by breaking along the cut edge.

Notes

Graham flour is nothing more than coarse ground whole wheat flour, with the germ and bran. So, any recipe calling for graham flour can be substituted with whole wheat flour.

If you are using this recipe to make a graham cracker crust you really don't need to trim the crackers, in step 13 above.
